Crema Catalana is a traditional Spanish dessert similar to crème brûlée. It is made with milk, egg yolks, sugar, cornstarch, lemon peel, and cinnamon. Here's a simple recipe for you to try:


Ingredients:

1 liter of milk

4 egg yolks

1 lemon peel

1 cinnamon stick

4 tablespoons of sugar

1 tablespoon of cornstarch

Instructions:

1. In a saucepan, heat the milk with the lemon peel and cinnamon stick until it starts to simmer. Remove from heat and let it infuse for a few minutes.

2. In a bowl, whisk the egg yolks with the sugar until pale and creamy. Add the cornstarch and mix well.

3. Gradually pour the warm milk into the egg mixture, stirring constantly to avoid curdling.

4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.

5. Remove from heat and strain the mixture to remove the lemon peel and cinnamon stick.

6. Pour the custard into individual ramekins and let it cool to room temperature. Then refrigerate for at least 2 hours.

7. Before serving, sprinkle a thin layer of sugar on top of each custard and caramelize it with a kitchen torch or under a broiler until golden and crispy.
