Ingredients

For Marinade:

1/4 cup minced lemongrass, fresh or frozen

2 shallots, or 1/4 onion, sliced

4 cloves garlic

1 to 2 fresh red chiles, sliced, or 1/2 to 1 teaspoon cayenne pepper, to taste

1 thumb-size piece galangal, or ginger, thinly sliced

1/2 teaspoon turmeric

2 tablespoons ground coriander

2 teaspoons cumin

3 tablespoons dark soy sauce 

3 tablespoons fish sauce

6 tablespoons brown sugar (you need all of this)

2 tablespoons vegetable oil

For Meat:

8 boneless chicken thighs, cut into small, thin pieces

For Serving:

Peanut dipping sauce, for serving

Cooked jasmine rice, for serving

Steps to Make:

1. Marinate the Meat: In a bowl, combine the soy sauce, fish sauce, minced garlic, finely chopped lemongrass, turmeric, and sugar. Add the sliced meat to the marinade, ensuring that it's well coated. Cover the bowl and refrigerate for at least 1-2 hours to allow the flavors to infuse.

2. Prepare the Peanut Sauce: In a saucepan, combine the peanut butter, coconut milk, red curry paste, and lime juice. Cook over low heat, stirring constantly until the sauce is smooth and heated through. Set aside to cool.

3. Skewer the Meat: Thread the marinated meat onto the skewers, making sure to leave space at the bottom for easy handling. If you're using wooden skewers, remember to soak them in water for at least 30 minutes beforehand to prevent them from burning on the grill.

4. Grill the Satay: Preheat your grill or grill pan to medium-high heat. Place the skewers on the grill and cook for 2-3 minutes on each side, or until the meat is cooked through and has a nice charred exterior.
