Ingredients:

- 1 lb fresh mushrooms, cleaned and sliced

- 2 shallots, finely chopped (or 1 onion as a substitute)

- 2-3 sprigs of fresh thyme

- 1 sprig of fresh rosemary

- 2-3 cloves of garlic, minced

- 1/4 cup vinegar

- 1/2 cup dry red or white wine

- 1 cup broth or stock (chicken or vegetable)

- 2 tablespoons butter

- 1/4 cup heavy cream (optional)

Instructions:

1. In a large skillet or saucepan, melt the butter over medium heat.

2. Add the chopped shallots and sauté until they are soft and slightly caramelized.

4. Deglaze the pan by adding the vinegar and wine, allowing the liquid to reduce by half to intensify the flavors.

6. Pour in the broth or stock and simmer the mixture for about 10-15 minutes until it reaches a desired consistency.

7. If using cream, stir it into the sauce and allow it to simmer for an additional 5 minutes to thicken.

8. Season the sauce with salt and pepper to taste.
